My 2 cents is that Cat6 is better as you get lower latency. I run Cat6 from living to bedroom and when compared to a Cat5e, I get lower pings when I run speed test (single digit usually)

How many meters do u need?

3 bedroom I don't think u need 100 meters even with redundancy.

I have some Cat 6 left over

You may run cat6 as fibre optic is running cat 6.
