Hi there,

What do you plan to cook tonight?

I wanted to make this a thread apart from 'what are you eating now' because seldom am I eating my tasty meal whilst at the computer- I assume others must feel the same.

So, in the spirit of ongoing discussion threads, whenever you have a meal idea it share, drop it on us here and share prep/recipe details if you please.

Tonight, I'm making an end-loin of pork roast, stuffed with crushed pistachios and sherry caramelized red onions with corn and fried sweet potatoes.

Right now, the butter flied roast is soaking in olive oil with tarragon, sage, black pepper, garlic and crushed fennel seeds. I'm sitting here shelling the pistachios and taking bong hits while the herbal flavours permeate the roast.

The onions will be sautéed with sherry, butter and a touch of red currant preserves, mixed with crushed pistachios and spices to be stuffed inside the roast before tying it myself. I'll pan sear the outside of the roast before putting it in the oven.

Great thread~ :) was thinking of something like this will be good - we can share dinner ideas with each other... i often find the most difficult thing for cooking dinner is thinking of what to cook! :lol:

I'm not cooking tonite... but i can share what I cooked yesterday :lol: but hor mine is just simple dish for simple dinner only... not as elaborate as yours :)

Tom Yam Chicken

Ingredient:

Chicken thigh -> cut into chunks

Small red onions

spring onion -> cut into small sections of ~3mm length

chili padi -> 1 will do. cut into small pieces

Garlic

Tomato

Tom Yam Paste

salt, corn starch, sesame oil, white pepper -> to marinate the chicken.

How to make:

Very simple...

after marinating the chicken meat for ~15 mins, throw them into a wok and simmer at low heat. Mix tom yam paste with some water and throw into the wok as well, and then throw the garlic, tomato, spring onion and chili padi one by one and poach the chicken until cooked...

within 5 mins... can serve liao :lol:

Tonight is simple dinner night, just a cold dish of tofu topped with spicy "zha choi" (anyone knows what it's called in english?) and some blanched veg with oyster sauce. No meat :)

Tomorrow i'll make some roasted chicken thighs... have not figured out the sauce nor side dishes yet. Ideas anyone?

"zha choi" = Sichuan cabbage (the slightly spicy type?) :lol:

Tomorrow i'll make some roasted chicken thighs... have not figured out the sauce nor side dishes yet. Ideas anyone?

how about teriyaki source? yum yum.... :dribble:

interesting thread. but makes me hungry reading it this time of the night!

how about roasting veg along with the chicken? or coleslaw?

This week has been so hard in terms of work that I've had absolutely no energy to prepare meals. I've spent tons of money on food delivery and prepared food at restaurants.

I also have times when I don't have time, don't want to or physically can't cook because I'm tired. But if I have the desire, I love to come up with something new. I recently found a Gourmet Food Store where you can even buy foie gras and various pâtés. I am fond of smoked salmon pate, and it's especially good with fresh bread, crunchy pickles. I plan to buy something else from this store, like cheeses.
