I've posted it here liao. Click here! For plain cupcakes, just increase the vanilla essence and omit the lemon juice and all zest. Can try to add other flavours and ingredients to different flavours of cupcakes. Hi Angel81, need your advice. But I've googled the problem and these are afew of the better answers. Scroll down both webbies and look for the reasons given for cracked crust. http://www.landolakes.com/tips/Faqs_print.cfm?QCategoryID=2 http://www.ingredientexperts.com/content/view/41/53/ I read in other sites that it's fine for cupcakes to have cracked tops, as many people will frost the cupcakes and that will hide the cracked tops. To make the surface flat, just cut the top off will do. Alternatively, try not to fill the cupcake liner/tray to the brim. Just fill it up to around 1/2 to max 2/3. That way, the cupcake wun rise too high and may not get too many cracks. Oh, and did you observe which areas the cupcakes crack more? For example the cupcakes at the left corner of your oven crack the most. It's possible that that area is much hotter than the other sides of your oven. YUMMY YUMMY.. make me so so hungry!!!!! oh... i also need tips on the crust.. so for now i just use the my chicken pie filling with bread or biscuit! cos i just love the creamy white sauce!
