applefreak 1 Report post Posted January 19, 2008 there's basically three types of abalone in the market1. fresh2. canned3. driedfor fresh one, it's the most fishy tasting coz no processing was donecanned ones are usually cooked in broth to add to the sweetness. amongst the canned ones, those from mexico is supposed to be the best but also the most expensive.one can can be double the price of a new zealand can. second will be australia one followed by new zealand (the cheapest)seriously i can't really tell the difference between these three countries' abalone for dried ones, the number of head is equal to the number of abalone weighing 600gmso one-head abalone means one weighs 600gm, two-head means each weighs 300gmthink the best is japanese wang bao (net abalone)guess it's a personal choice coz all of us prefer different taste / texture Share this post Link to post Share on other sites

Chunky Monkey 2 Report post Posted January 19, 2008 Canned abalone is the easiest. The best ones are those which are THICK and FIRM but soft to the bite. The premium brand is Calmex. About S$95 - S$105 per tin, I think.As for fresh abalone, I think the best grade is the Emperor Abalone that is a bit greenish. About A$150 each. Share this post Link to post Share on other sites
