deathcoth 0 Report post Posted August 31, 2007 Moroccan ChickpeasMarrakesh Spice Mix3 tbsp ground coriander3 tbsp paprika2 tbsp cumin1 tbsp dried thyme1-2 tsp cayenne pepper1 1/2 tsp cinnamonMoroccan Chickpeas1 tbsp olive oil1 medium onion, finely chopped2 cloves garlic, finely chopped1 tbsp Marrakesh spice mix (listed above)2 cans chickpeas2 ripe field tomatoes, chopped2 tbsp fresh mint, chopped1/4 cup fresh flat leaf parsley, choppedkosher or sea salt and freshly ground black pepper to taste1. Heat oil in a frying pan set over medium heat. Add onion and cook, stirring occasionally, for 5-7 minutes until soft, but not brown.2. Stir in garlic and spice mix and cook for a couple of minutes.3 Drain chickpeas, rinse under cold water and add to the pan. Stir to coat the chickpeas in the onion mixtures and heat through, about 5 minutes4..Add tomatoes and herbs, and heat just to blend flavours. Season to taste.
