Not possible and no contractor or ID will able to do this for u. There no way u can make a full length windows at all. Hacking the beam and all the wall inside, I don't think PE will approve on it, especially on the beam.

Well 666, bi-fold door is ard $150-$250, so it consider reasonable. As for laminate flooring, most of the samples are more to the woody feeling. As for the thickness, is 8mm - 12mm only, depend on the type/brand u chosen (of course price different a lot). Material wise also have few types and it do different too.

U may also try using vinyl flooring for your kitchen.
